Roasted Beet, Onion, and Orange Salad

Coconut-Lime Pudding Cake


2 tablespoons unsalted butter, softened, plus a bit for the pan
3/4 cup granulated sugar
1/4 cup all-purpose flour
3 large eggs at room temperature, separated
1/2 cup limeade concentrate, thawed
3/4 cup canned unsweetened coconut milk
1/4 teaspoon fine salt
Toasted coconut, for garnish, optional
Game Plan: Start boiling the water when you turn the oven on so it's ready when the cake goes into the oven. Separate eggs while the lime concentrate thaws in the microwave.

Position a rack in the center of the oven and preheat to 325 degrees F. Lightly butter a 1-quart gratin dish or 8-inch round cake pan and set it in a roasting pan.

Beat the 2 tablespoons butter with 1/2 cup sugar in a large bowl until creamy, using a handheld electric mixer. Beat in the flour, then the egg yolks, limeade concentrate, coconut milk, and salt. (For the airiest egg whites, clean the beaters thoroughly so none of this mixture is left on them.) In another medium bowl whip the egg whites until they form soft peaks. While whipping, slowly pour in the remaining 1/4 cup granulated sugar and continue beating until the whites hold stiff, glossy peaks. Fold a quarter of the whites into the coconut-lime mixture, then fold in the remaining whites.

Pour the batter into the prepared baking dish and add enough boiling water to the roasting pan to come halfway up the side of the dish. Bake about 35 minutes or until the top of the pudding cake is slightly puffed and golden. Remove from the water bath and cool on a wire rack for 10 minutes; serve warm. Garnish each serving with toasted coconut, if desired.

Know-How: Baking the cake in a water bath ensures that it will bake evenly and retain its luscious, saucy bottom.

Roasted Beet, Onion, and Orange Salad


1 pound beets, preferably very small ones
1 tablespoon
extra-virgin olive oil
Salt and freshly ground pepper
20 large pearl onions, about 1/2 pound
2 oranges, peeled and cut into wedges

2 tablespoons hazelnut oil
1 tablespoon coarsely chopped fresh coriander leaves (also known as cilantro) plus extra for garnish
1/2 cup freshly squeezed orange juice
2 tablespoons hazelnuts, toasted and peeled

1-ounce pecorino, optional, grated on medium-sized holes of box grater

Preheat the oven to 400 degrees F.

Cut the stems and tails off the beets. Do not peel. Line the bottom of a baking pan with foil. Place the beets in the pan and toss them with half of the olive oil, salt and pepper. Roast for 25 minutes.

Trim both ends off the pearl onions. Then toss them with remaining olive oil and salt and pepper. Add pearl onions to the beets and roast an additional 15 minutes, until beets and onions are tender.

Peel and remove the membranes from the oranges with a sharp paring knife. Cut the oranges in half lengthwise and then crosswise into thin slices. Seed the slices, if necessary.

Peel and quarter the beets. Lay the beets on a large platter. Top the beets with the orange pieces. Scatter the roasted onions around the beats.
In a medium bowl, combine the hazelnut oil, coriander, and orange juice. Whisk until well combined and season with salt and pepper.
Drizzle the dressing on top and sprinkle with coriander, toasted hazelnuts and grated cheese. Serve immediately.

Rosamund Pike played Elizabeth Malet in The Libertine (2005) co-starring Johnny Depp, which won her the Best Supporting Actress award at the British Independent Film Awards. In the same year, she portrayed Rose in The Promised Land, a film about Israel, starred as scientist Samantha Grimm in the cinematic adaptation of the computer game Doom, and appeared as Jane, the elder sister of Elizabeth (played by Keira Knightley), in Pride & Prejudice.

She has a role in the upcoming film adaptation of Anne Michaels' novel Fugitive Pieces, scheduled for release in 2007, and is recording voicework for a lead role in the forthcoming film Jackboots on Whitehall.

Pike can currently be seen in the movie Fracture, opposite Anthony Hopkins and Ryan Gosling. The film was her first experience of shooting a movie in Los Angeles.

Recent stage credits include Hitchcock Blonde by Terry Johnson (in a role requiring her to appear nude on stage) and Tennessee Williams' Summer and Smoke, both in London's West End. She will next work on a production of Gaslight at London's Old Vic Theatre.

She is a skilled cellist and speaks fluent German and French. She currently lives in the West End and is dating director Joe Wright, following a relationship with Pride and Prejudice co-star Simon Woods, whom she met at university.
