Chocolate Mousse

6 ounces semisweet or bittersweet chocolate, or a mixture, finely chopped
1 cup heavy cream
1 tablespoon warm water
1/2 teaspoon instant espresso powder, optional
1 large egg
2 large egg yolks
Pinch fine salt
1/3 cup sugar
Put the chocolate in a medium heatproof bowl. Bring a saucepan filled with 1 inch or so of water to a very slow simmer; set the bowl over, but not touching, the water. Stir the chocolate occasionally until melted and smooth. (Alternatively, put the chocolate in a medium microwave-safe bowl. Melt at 50 percent power in the microwave until soft, about 1 minute. Stir, and continue heat until completely melted, about 1 to 2 minutes more.)

Whip the cream in a medium bowl until it holds soft peaks. Take care not to over whip the cream or the mousse will be dense. Cover and refrigerate while you cook the eggs.

Whisk the water and espresso powder together in a small bowl.
Put the eggs in another bowl that also sets over the water in the saucepan. Beat the egg yolks, pinch of salt, and sugar until foamy and light, about 30 seconds. Set the bowl over the water and whip with an electric mixer or whisk, moving in a circular motion around the bowl, until the eggs get very fluffy and hot to the touch, about 3 minutes. Remove the bowl from the heat and continue beating on high speed until the thick ribbons fall from the beater when lifted out of the bowl, about 5 minutes more. Fold in the espresso.

Fold about a quarter of the eggs into the chocolate to lighten it, then fold in the rest of the egg. Finally fold the whipped cream into the chocolate base to make a smooth light mousse. Pour the mousse into 4 serving dishes or wine glasses. Cover and refrigerate until set, about 1 hour. Serve.

For a dark, double-rich mousse, use all bittersweet chocolate instead of the semisweet, and decrease the cream to 3/4 cup.

Roast Leg of Lamb with Dark Beer, Honey and Thyme

Roast Leg of Lamb with Dark Beer, Honey and Thyme
7 to 8 pound leg of lamb, thighbone removed, and shin bone in (have your butcher do this)
4 cloves garlic, chopped
3 tablespoon fresh thyme leaves
3 tablespoons extra virgin olive oil
Kosher salt and freshly ground black pepper
2 cups stout beer or porter (recommended: Guinness)
1/2 cup honey
1 teaspoon juniper berries, crushed
2 bay leaves
Preheat oven to 375 degrees F.

Open the leg of lamb and season the inside with half the garlic, half the thyme leaves, 1 tablespoon olive oil, salt, and pepper. Tie the lamb closed with string. Place it in a roasting pan, season with salt and pepper, and brush it with olive oil. In a bowl mix the beer, honey, remaining garlic and thyme, juniper berries, and bay leaves. Pour this over the lamb and put the roasting pan into oven. Immediately turn the oven down to 325 degrees F. Baste every 10 minutes. Cook 12 to 13 minutes per pound for medium rare or until internal temperature reaches 130 to 135 degrees F. Remove the roast from the oven, cover it loosely with foil and allow it to rest for about 10 minutes before carving. Serve with pan drippings.

However the most fortifying of all is milk but most of use drop out of our milk drinking phase by the time we hit puberty. It has a very kid friendly image so designers sought out to rebrand milk as the next “Redbull” drink.

Cellphone Inspired By Chinese ScrollsAs flexible displays come to market, designers are asked how they can design products that utilize the technology while remaining meaningful. Yun Liang’s scroll cellphone takes its inspiration from how traditional Chinese paintings are unfurled.

When not in use, the display neatly rolls into the tube. All numeric key functions remain tactile running along the side of the scroll as opposed to touchscreen. This makes it possible to use without having to unroll the screen. You would only do so when accessing media and data.

GPNC 70 LCD PCKorean company GPNC has put together a 70 inch all-in-one PC, making it the world's largest. The monitor is meant for commercial use and will come in both touch-screen and standard LCD models. Although the manufacturer didn't even bother taking a product shot without an XP error message in it, so who knows what kind of effort they're putting into this thing. If you open up the monitor it's probably just filled with styrofoam peanuts instead of actual electronics.

DigitalLife 2007 brings tech toy favorites

NEW YORK--While DigitalLife 2007 did see a better turnout than last year according to those who attended both, there wasn't all that much in terms of new tech toys at the show.

Lots of favorites simply continued to make the digital world rounds.

The R2D2 television projector from Nikko was set up to play the famous lightsaber sequences scenes from the Star Wars films.

Lots of people were playing with the Novint Falcon at the Novint Technologies booth. The company announced Thursday that the 3D game controller would be available at CompUSA stores this October for about $239.

WowWee showed off its RoboPanda, Elvis, Roboquad robots and the Fly Tech Barry B. Benson remote control flying bee.

The Credit Card Of The Future

I prefer using my bank card over physical cash and here’s why. With a card, I can’t view real-time data on my account usage. In a way I feel I can keep shopping all willy nilly without a care in the world and not feel guilty since I can’t see what it’s doing to my checking account - no doubt bleeding from my frivolous shopping trips.

Designer Jacob Palmborg’s solve for shopaholics like me is an RFID card linked to every account you have. A small interface indicates your own economic situation and forecasts what effects your purchases might have on your future economic status. The whole thing works wirelessly so no actual date is stored on the card. The card also has biometric security so only you can access it. This opens up the possibility of it being your driver’s license, student ID, passport, etc. Now if it only had customizable wallpapers, I’m sold!

The tie clip MP3 player is exactly what is says, a tie clip MP3 player. What’s a tie clip? For shame! A tie clip is a simple clasp or clip used to keep the two dangling ends of a tie together. Sometimes it’s even clipped to the dress shirt underneath so your tie won’t move. Now, throw in a single line LCD, some simple play/stop controls, and a little flash memory and you’ve got yourself a tie clip MP3 player.

You can even use it as a messaging panel, like a “Hello, my name is. . ., ” or casually slip into the Republican convention with “Bush Sucks” flashing for all to see.

Radio Built-in Surfboard by Lenart Studios

Two way radio for surfers. The idea is that surfers are separated from currents and riding waves. This radio allows the surfers to keep in touch with each other. It also gives the surfer up to the minute information about the tide using GPS. The radio is also to be used to locate injured surfers.
